We're obsessing over all things hot cocoa this season, y'all! With our Too Hot Chocolate with Marshmallows flavor to enjoy by the scoop or by the pint at our Austin & San Antonio scoop shops, our NEW Frosty Hot Cocoa beverage, and our Hot Cocoa Gift Box that includes a cute speckled ceramic mug, a hot cocoa recipe book, and a bag of our exclusive hot cocoa mix made entirely with local SRSLY Chocolate, we quite literally can't get enough hot cocoa. This fall has been a cold one in Central Texas and all of these are helping keep us warm & cozy through the chilliest days.
Lucky for us, we also have a big reason to celebrate this decadent treat: tomorrow, December 13th, is National Cocoa Day! And we came up with a unique dessert to create with our own Hot Cocoa mix, as if we don't have enough hot cocoa things to sink our teeth into.
If you haven't tried it yet, we hope you'll join us for a cup of Frosty Hot Cocoa and maybe you'll grab a Hot Cocoa Gift Box to go so you can whip up this luscious Hot Cocoa Mug Cake in your own home. It's one of the easiest cakes you'll ever make and should be enjoyed with a side of hot cocoa. Topped some chocolate ice cream.
Okay, you get the point. :)

Hot Cocoa Mug Cake
Makes 1 serving
1/2 cup Lick's Hot Cocoa mix
1/4 cup all purpose flour
1 Tbs. granulated sugar
1/4 tsp. baking powder
2 Tbs. vegetable oil
1/4 cup heavy cream
1 Tbs. water
1-2 Tbs. semi-sweet chocolate chips
In a small bowl, whisk together the hot cocoa mix, flour, sugar, and baking powder. Set aside.
In a separate small bowl, whisk together the oil, heavy cream, and water.
Add the wet ingredients to the dry ingredients and whisk together until incorporated. Fold in the chocolate chips, then pour batter into a microwave safe mug.
Microwave on high for 1 minute.* Remove from microwave, let cool slightly before eating, and top with some scoops of your favorite Lick Honest Ice Creams flavor!
Note: microwave strengths vary, so if the batter is still liquid after one minute, cook on high for 15 more seconds. Continue cooking at 15 second increments until the mug cake is cooked through the center and ibegins to pull away from the sides of the mug.
